If you find yourself in Breckenridge on your Colorado vacation, then you’re probably there to hit the slopes and not the restaurants. Despite this fact, you will undoubtedly need to grab a bite to eat every now and then. If you’re looking for a place to refuel, there are few musts when visiting Breckenridge. With a wide range of foods from fish to fondue, there are plenty of options to choose from.
Ember
Scott Boshaw, the head chef of Ember, lives by the motto “never rest on your laurels.” Following that motto, Boshaw opened Ember with the intention of getting out on his own and presenting the people of Breckenridge with his definition of fine dining.
Offering international dishes with a personal twist, Boshaw serves all who walk through the doors with both beautifully presented food and a unique dining experience. This is evident in dishes such as his Pizza with Chestnut Cream, Roasted Grapes, Candied Walnuts, and Fontina Cheese, or his New York Strip with Chorizo Mac’N’Goat Cheese, Artichoke Guac, and Chimichurri.

South Ridge Seafood Grill
When you think of dining in the Rockies, seafood probably isn’t the first thing that comes to mind. South Ridge Seafood Grill (photo at top) sets out to show that you can find fresh and delicious seafood in the mountains. Serving the residents of Breckenridge with quality seafood since 1998, South Ridge has established itself as the premiere seafood restaurant in the area.
With a menu of “things that swim”, patrons of the Grill will find exotic dishes such as Blackened Gulf Shrimp on Cream Corn-Parmesan Grits with Grilled Scallions, Roasted Roma Tomatoes, and a Tabasco Butter Sauce and more local dishes such as their Grilled Rocky Mountain Trout with Potato-Bacon-Shrimp Hash, Snow Peas, and Lemon-Thyme Aioli.
The Swiss Haven and Absinthe Bar
What better way to warm up after a day of skiing in Breckenridge than indulging in some hot fondue and absinthe? If there is a better way, Alfonso, the owner of the two, doesn’t want to know.
With a mix of cheese, seafood, meat, and dessert fondues there is sure to be something that satisfies your pallet. Whether you choose the Moite- Moite or the Diced Black Angus Filet Mignon fondue, you’ll walk away warm and satisfied.
To aid in satisfaction, Swiss Haven “recommends warm or alcoholic beverages to accompany cheese fondues to aid with digestion.” Being the case, patrons need only head downstairs to the Absinthe Bar where they are greeted by the image of the sultry green fairy that the high-proof potable is known for.
With a mix of imported and locally brewed absinthe, spirits, and beers there are plethora of options to choose from. With a knowledgeable and friendly staff behind the bar, you’ll feel right at home on your Colorado ski vacation.
